Hails from vineyards in Pouilly-sur-Loire on the right bank of France’s longest river. It’s traditionally vinified on its lees for 6 months in stainless steel tanks and is notable for its elegance and minerality. The lively bouquet is of tropical fruits, white flowers and hazelnuts. In the mouth it’s quite full but supple with a certain saline quality, and of course there’s crisp Sauvignon acidity with a touch of smokiness (hence ‘fumé’). The producer recommends trying this with salmon, Brussels sprouts and Pouilly-Fumé sauce (is that really the best use of the wine?). Or with broccoli and asparagus pasta. Whatever you choose, this is a wonderful food wine.
