The aromatic Viognier produces its aromas at a certain stage of maturation. Our winemaking team taste the grapes in August, to choose the right day to harvest. Post-harvest the grapes undergo a short skin-contact maceration. Then, the juice, after a delicate pressing and meticulous off-settling, ferments at low temperature. Enticingly aromatic with characteristic exotic stone fruit and honeysuckle, our dawn-picked Viognier is rich yet refreshingly dry.
